Creamy Peanut Butter Garlic Cucumber Salad

Take two cucumbers, cut off the ends, and slice them into bite-sized pieces. The shape and size can be adjusted to your preference.

Smash two cloves of garlic and then finely mince them.

In a small container or measuring cup, combine peanut butter, Korean chili pepper flakes, soy sauce, sugar, lemon juice, toasted sesame oil, and the minced garlic.

Mix all the dressing ingredients together until well combined.

Using a mortar and pestle, grind the toasted sesame seeds to release their flavor.

In a large mixing bowl with the sliced cucumbers, pour over the prepared dressing and add the freshly ground sesame seeds.

Gently toss everything together until the cucumbers are thoroughly coated with the dressing.

Transfer the salad to a serving plate. Garnish with chopped green onions and a drizzle of chili oil if desired.
