Sweet Potato French Toast

Peel and slice the sweet potatoes.

Place the sliced potatoes in a microwave-safe bowl, add water, and cook for 5.5 to 7 minutes until soft. Alternatively, you can steam them.

Mash the cooked sweet potatoes thoroughly until they are smooth.

Add the eggs and a pinch of salt to the mashed sweet potatoes and mix well.

Add sugar to the mixture and stir until it's well combined and has a sticky consistency.

Lightly oil a pan and heat it over low heat.

Pour the sweet potato mixture into the pan and spread it evenly into the shape of a toast slice.

When the bottom is slightly cooked, add butter to the pan and move the toast around to spread it evenly underneath.

When the bottom turns light golden brown, carefully flip the toast and cook the other side until it's also golden.

Once both sides are cooked evenly, remove it from the pan.

Spread a thin layer of the sweet potato mixture in the pan.

Place a slice of cheese on top of the mixture.

Cover the cheese with another layer of the mixture and shape it into a toast.

Add butter and cook both sides until golden brown, ensuring the cheese is melted inside.

Place the cooked French toast on a serving plate.

Optionally, sprinkle powdered sugar on top.

Cut the toast into small triangles for easy handling and serve.
