Take Korean Corn Cheese to the Next Level

Grill the corn on the cob directly over an open flame until it's charred and starts to crackle.

Once the corn has cooled slightly, cut the kernels off the cob and place them into a large mixing bowl.

Add pickled red onion to the bowl with the corn.

Add all of the mayonnaise to the bowl.

Mix all the ingredients in the bowl until they are thoroughly combined.

Transfer the corn mixture into an oven-safe skillet or pan.

Sprinkle a generous layer of mozzarella cheese evenly over the top of the corn mixture.

Place the skillet in the oven and bake at 500°F until the cheese is completely melted and bubbly.

Garnish the finished corn cheese with lime wedges, chili flakes, and fresh basil before serving.
